Breakfast Quiche

Good morning! It’s time to use up what’s in the fridge day & what better meal option than quiche! Hearty, healthy and oh so delicious! 

Prep time: 15 mins          Bake time: 30 – 35 mins

1 tbsp coconut oil (optional)

2 tbsp couscous

5 bocconcini balls, diced

3 tbsp goat cheese

2 chicken breast thighs, boneless, skinless, cooked

1 sweet potato, cooked, diced

1/2 cup red peppers, diced

1 cup onion, white or red

1 jalapeno, diced

2 eggs

1/4 cup 2% milk

1/2 tsp garlic+ seasoning

1 tsp cajun

salt & pepper to taste

  1. Preheat oven to 400″F.
  2. Melt coconut oil to cover bottom of 9″ pie pan (can also use cooking spray).
  3. Mix together couscous, bocconcini, goat cheese, chicken, sweet potato, red peppers, onion & jalapeno.
  4. In separate bowl, whisk eggs & milk together & add to mixture (mentioned above). Mix well.
  5. Season with garlic+, cajun, salt & pepper.
  6. Pour mixture evenly into 9″ pie pan.
  7. Sprinkle grated cheese evenly on top of mixture.
  8. Place in preheated oven. Bake for 30 – 35 mins.
