Banana Bread

Prep time: 15 mins           Cook time: 45 – 55 mins

1 1/2 cup flour

1/4 tsp salt

1 tsp baking soda

3 bananas, very ripe

1 cup sugar

2 large eggs

1/4 coconut oil, soft

1/2 cup walnuts

  1. Preheat oven to 350″F.
  2. Combine flour, salt and baking soda in large bowl.
  3. In separate bowl, blend sugar, eggs & coconut oil. Add bananas to the sugar mixture one at a time, mixing well.
  4. Add sugar-banana mixture to dry ingredients (flour, salt, baking soda). Blend well.
  5. Pour into 4-1/2 x 8-1/2″ loaf pan. Sprinkle walnuts on top & place in preheated oven. Bake for 45 – 55 min  (until toothpick inserted in loaf comes out clean).
